Gin Cocktails – The Lincolnshire Mojito

With the help of Vanessa, a top Instagram mixologist, we have created this Lincolnshire Mojito to mark the anniversary of the Lincolnshire rising. Every year since 2006, the county has celebrated Lincolnshire Day on the 1st of October. Using our Lincolnshire Gin and locally sourced Lincolnshire Honey to substitute for sugar. In 2016 the Mojito was named the most popular cocktail in Britain, and we can see why. The versatility of a mojito is wonderful. Whether you make it with the traditional white rum, brandy or in this instance gin, its combination of sweetness, citrus and herbaceous mint has propelled this refreshing drink to the top of the rankings.

This gin cocktail has a very FRESH, mint-forward taste, that ends with a little bit of tang as your taste buds get hit with a PUNCH of fresh lime and lemon juice. It’s not sour though, as the little bit of honey calms all that punchiness right down! Perfect for those warm summer days that are sadly behind us for 2020 but this gives you plenty of time to perfect your Lincolnshire Mojito’s ready for summer 2021. July 11th is National Mojito day, so you have plenty of time to get it right. So, to the drink itself:

Ingredients:

60ml Burrell’s Dry Gin

10ml lime juice

5ml lemon juice

15ml Lincolnshire Honey in about 3:1 with hot water

Fresh Mint

Dried Bay Leaves

Method:

  1. Place the lime juice, lemon juice, mint and bay leaves into a sturdy highball glass and ‘muddle’ with the end of a clean rolling pin, to bruise the mint and release the oils.
  2. Add the Lincolnshire Honey mixture and stir.
  3. Add the ice and pour over the Burrell’s Dry Gin
  4. Add soda water to taste and stir well.

Garnish: mint sprig and bay leaf
